At our homestead distillery, we’re passionate about reviving the old ways, crafting life’s essentials and pleasures from the land, by hand, and with heart.
We’re dedicated to self-sufficiency and living in tune with our environment from growing food on our homestead, harvesting wild food from our rugged back country, to handmaking herbal tinctures, soaps etc. We believe in starting from scratch and giving back to the land that provides.
Our time exploring New Zealand’s backcountry continues to fuel our commitment to a life of adventure, craftsmanship, and sustainability.

Each batch we produce is a reflection of the traditions we honour, the land we cherish, and the life we choose to live.​

Our Distillery
Our Wood-Fired Still - "The Tin Man"

The heart of our distillery is our copper wood fired still. The design is inspired by the original scottish and irish distilling masters and more recently the distilling legend, Popcorn Sutton. We named it the Tin Man.

We also designed and built our wood fired mash tun on our homestead. The design is inspired by John Ashley Hart's "Benghazi Boiler", which was used by New Zealand soldiers to efficiently boil water using only twigs and small sticks during World War 2 whilst fighting in the desserts of Africa.

This is an iconic example of New Zealand "number 8 wire" ingenuity.

Our Homestead
From Seed to Spirit

Every spirit begins long before it reaches the still. We grow our own organic heirloom corn seed which we use in various ratios. The very same variety once used by early Irish immigrant moonshiners over a century ago. By preserving this heritage grain, we honour traditional craft while creating a spirit that carries history in every drop.
Once harvested, the corn is milled and prepared on site to preserve freshness and flavour. Through our involvement at each step of the process—from grain preparation to fermentation and distillation, we maintain complete traceability and consistency. This hands-on approach allows the true essence of our ingredients to shine through, resulting in a spirit that genuinely reflects its origin and our commitment to heritage and craftsmanship.
Our Products
Our finished spirit is the result of back breaking work in our fields, patience as organic fertilizer matures over winter, hot days and cold nights, literally by the light of the moon, carefully monitoring the fire during distillation - more art than science. Patient refinement, and an unwavering focus on historical authenticity and quality.

Also, sometimes even heartbreak if crops fail, or birds take more than their share of the corn! Each batch is distilled in small runs to preserve our way of life and avoid negative impact on our land.
Our spirits are fermented and distilled "on the Grain" This historically correct method allows the natural character of the grain to shine through. After distillation, the spirit is rested. Unlike larger distilleries which may have to make cuts on the run, we select the Usable "hearts cut" in a calm unhurried process after distillation, using taste, smell and mouthfeel. but most importantly - mutual agreement to make our decision.
Proofed with Artesian Spring water and finished with precision to achieve a smooth mouthfeel with a clean, well-rounded profile.
The result is refined, expressive spirits that can be enjoyed neat, over ice, or as the foundation for cocktails.
